Red rice yeast is traditionally produced by fermenting the yeast, Monascus purpureus, in rice. It is a dietary staple in Asian cuisine and has been used as a natural food colorant. Red rice yeast contains a variety of compounds including phytosterols, isoflavones and monounsaturated fatty acids, all which can be beneficial to cardiovascular health. It has been studied extensively for its use in supporting already normal lipid levels.
